INGREDIENTS

  • 150 g instant bulgur wheat
  • 50 g sun-dried tomatoes in oil
  • 100 g feta cheese
  • 1 red onion
  • 1 clove of garlic
  • 50 g roasted pine nuts
  • In total 4-5 tbsp. olive oil
  • 2 tbsp. balsamic bianco vinegar
  • Salt, pepper, cinnamon
  • Juice of ½ lemon
  • 2-3 sprigs each of fl at-leaf parsley and mint
  • 4 small courgettes
  • 1. Bring 200 ml salted water to the boil. Add the bulgur wheat to this and allow to cook gently on a low heat for approx. 8 minutes.

    2. In the meantime, dry the sun-dried tomatoes and chop fi nely. Crumble the feta cheese. Peel the onion and garlic, chop fi nely and sweat for 1 minute in 2 tbsp. of hot olive oil, then add the vinegar.

    3. Fluff up the bulgur wheat with a fork and place in a salad bowl. Combine the sautéed onions with the pine nuts, the chopped tomatoes and the crumbled feta and mix together.

    4. Season with salt, pepper, lemon juice and a pinch of cinnamon.

    5. Pull the mint and parsley leaves off the stems and chop roughly, then mix together.

    6. Cut the courgettes in half lengthways and hollow out slightly. Spread the bulgur mixture over the top.

    7. Heat the remaining olive oil in a griddle pan, place the stuff ed courgettes alongside each other in the pan. Cover with tin foil. Cook on a medium heat for around 6-8 minutes
